  • 1 teaspoon salt
  • 1 teaspoon seasoning blend Italian seasoning or your favorite mix
  • 1/4 cup tomato paste
  • 1/2 cup sun-dried tomatoes chopped (oil-packed for extra richness)
  • 4 cups chicken broth or chicken stock
  • 1/2 cup white wine optional for extra depth of flavor
  • 1 1/2 pounds skinless chicken breasts or thighs
  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 2 cups fresh spinach or baby spinach
  • 1 cup shredded chicken if using pre-cooked chicken

Instructions
 

  • Cook the onion and garlic in a large pot over medium-high heat.
  • Stir in tomato paste, sun-dried tomatoes, and seasonings.
  • Add the chicken and chicken broth, then simmer until tender.
