Ingredients
  

  • 3 cups cold cooked rice (white, brown, or jasmine)
  • ¾ cup leftover ham diced
  • 2 large eggs
  • ½ cup carrot diced
  • ½ cup peas fresh or thawed
  • 3 green onions chopped
  • 2 tbsp soy sauce or gluten-free soy sauce
  • 4 tbsp sesame oil
  • Salt and pepper to taste

Instructions
 

  • Prep ingredients – Dice ham, chop veggies, and thaw peas if frozen.
  • Cook eggs – Heat 1 tbsp sesame oil, scrambled eggs, and set aside.
  • Sauté ham and vegetables – Add 1 tbsp sesame oil, and cook 3-4 minutes until lightly browned.
  • Fry the rice – Add cold rice with 1 tbsp sesame oil stir for 3-4 minutes to prevent clumps.
  • Combine everything – Mix in eggs, soy sauce, and green onions. Stir well.
  • Final touches – Adjust salt and pepper. Serve hot.

Notes

  • Leftover rice from the refrigerator works best for texture.
  • Store in an airtight container for 3-4 days or freeze for up to 3 months.
  • Reheat in a skillet to keep the rice from getting mushy.
