- 3 cups cold cooked rice (white, brown, or jasmine)
- ¾ cup leftover ham diced
- 2 large eggs
- ½ cup carrot diced
- ½ cup peas fresh or thawed
- 3 green onions chopped
- 2 tbsp soy sauce or gluten-free soy sauce
- 4 tbsp sesame oil
- Salt and pepper to taste
Prep ingredients – Dice ham, chop veggies, and thaw peas if frozen.
Cook eggs – Heat 1 tbsp sesame oil, scrambled eggs, and set aside.
