Ingredients
  

  • 2 cups gluten-free flour blend
  • 2 ¼ tsp baking powder
  • ¼ cup cornstarch
  • ¾ tsp salt
  • 4 oz sharp cheddar cheese shredded
  • 1 ¼ cups buttermilk or almond milk + yogurt for dairy-free
  • 2 eggs beaten
  • 4 tbsp melted butter or vegan butter

Instructions
 

  • Preheat oven to 350°F (175°C). Grease a muffin tin.
  • In a large bowl, whisk dry ingredients together.
  • In another bowl, mix wet ingredients.
  • Combine wet and dry ingredients, then fold in cheddar cheese.
  • Fill the muffin tin ¾ full and bake for 20–25 minutes.
  • Cool on a wire rack before serving.

Notes

  • Store in an airtight container for up to 5 days.
  • Freeze for up to 3 months.
