- 2 cups gluten-free flour blend
- 2 ¼ tsp baking powder
- ¼ cup cornstarch
- ¾ tsp salt
- 4 oz sharp cheddar cheese shredded
- 1 ¼ cups buttermilk or almond milk + yogurt for dairy-free
- 2 eggs beaten
- 4 tbsp melted butter or vegan butter
Preheat oven to 350°F (175°C). Grease a muffin tin.
In a large bowl, whisk dry ingredients together.
In another bowl, mix wet ingredients.
Combine wet and dry ingredients, then fold in cheddar cheese.
Fill the muffin tin ¾ full and bake for 20–25 minutes.
Cool on a wire rack before serving.
