Ingredients
  

  • 3 ripe bananas mashed
  • 1 ½ cups gluten-free flour blend
  • ½ cup sugar or maple syrup
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 2 eggs or egg replacer
  • cup butter or coconut oil
  • 1 tsp vanilla extract
  • ½ tsp cinnamon
  • ¼ tsp salt
  • ½ cup chocolate chips walnuts, or blueberries

Instructions
 

  • Preheat oven to 350°F. Line muffin tin with liners.
  • Mash bananas in a mixing bowl.
  • Add sugar, butter, eggs, and vanilla. Mix well.
  • Add flour blend, baking powder, baking soda, cinnamon, and salt. Mix until smooth.
  • Fold in chocolate chips, walnuts, or blueberries.
  • Fill muffin cups with batter.
  • Bake for 18-22 minutes or until a toothpick inserted in the center comes clean.
  • Let muffins cool completely on a wire rack.

Notes

Use room temperature ingredients for best results. Store muffins in an airtight container.
